This creamy, nutty and vibrant dip is a wonderful union of both European and Middle Eastern cuisines. The wonderful Central European Ajvar red pepper spread makes a greate base for lifting the classic hummus into new realms of colour and flavour.
In a food processor, or using a stick blender, blend together all the hummus ingredients into a smooth paste.
Spoon into a serving bowl and scatter over the onion and mint. Drizzle with a little more extra virgin olive oil and that's it! Serve with pita or flatbreads to dip and scoop.
