Arakas Latheros (Greek Peas)
A delicious combination of sweet green peas, with potato, feta and lemon is a surprisingly fresh and tasty combination. Packed full of flavour and personality it's a dish that elevates the humble pea to an all-time high.

Ingredients
⅓
cup
extra virgin olive oil
1
small onion
diced

tomato
grated - about 200g

medium potatoes
peeled and cut into 2” pieces - around 12oz/350g
1
cup
vegetable stock/broth
1
small bunch dill
chopped

lemon

frozen peas
around 500g
Salt & pepper

feta cheese
Instructions
Heat the oil in a large deep sauté pan until hot. Add the spring onion and fry for 1-2 minutes until soft
Add the potatoes and garlic and fry for 1 minute then add the grated tomato and vegetable broth.
Bring to a simmer then reduce the heat and cover the pan. Cook for 10 minutes until the potatoes are just beginning to soften.
Add the peas and cover the pan again and cook gently for another 10 minutes.
Remove the lid and turn up the heat to simmer off most of the liquid.
Remove from the heat and stir in the lemon zest, juice and dill. Season well with salt and pepper.
Transfer to a serving dish or serve from the pan scattered with crumbled feta cheese.
