What makes a dish “Italian comfort food”?

Warm, hearty recipes built around slow cooking, rich sauces, beans, pasta, rice and seasonal vegetables. Something that warms your soul on a wintery or rainy day!

Are these dishes traditional?

Many are classic recipes, adapted and tested by me to be simple and achievable at home. Many I gathered while living in Abruzzo, Italy and from the regions I visited.

Do these recipes require special ingredients?

Mostly pantry basics: tomatoes, pasta, stock, herbs, garlic, beans, mushrooms and good olive oil. You may be asked for a specific ingredient like Nduja for instance, but nothing you can’t now find in most countries around the world. I’ll always offer up an alternative or substitution for specific ingredients too.

Can these dishes be made ahead?

Yes, the value of comfort food is that it can be made well ahead and often tastes better when reheated.
