Soy sauce, fish sauce, coconut milk, garlic, ginger, chilli, rice, noodles, herbs (like coriander and Thai basil), sesame oil and stock form the foundation of many Asian dishes.

Are these recipes authentic or your own interpretations?

Many are based on traditional Asian methods and flavours, but all recipes are tested, adapted and written in my own style to make them accessible at home. I’m all for authentic, so many of these recipes are gathered from multiple sources, chefs and friends who know the cuisines.

Do I need specialist equipment for Asian cooking?

A wok is helpful but not essential — a frying pan, saucepan and pot for noodles will take you far.
