Are these Indian recipes authentic?

Many dishes follow traditional regional methods, while others are simplified for home cooking. Each recipe is developed to honour the flavours, spices and cooking styles found across India.

Are the recipes very spicy?

Not necessarily. Indian cuisine is about flavour, not heat. Most dishes include guidance for adjusting chilli levels from mild to hot.

What ingredients do I need for Indian cooking?

Absolutely. Many Indian dishes use simple techniques and are very approachable with step-by-step instructions.

Which regions of India are represented?

A mix of North and South Indian dishes: creamy tomato-based curries, vibrant lentil dishes, coconut-rich Southern curries, biryanis, street food and simple home-style meals. Within those, Eastern and Western Indian recipes are included too and aligned with their closest geographical placement, either North or South. In addition, I have included Pakistani recipes with the North and Sri Lankan with the South.

Do the recipes require special equipment?

No special tools are required. A pot, pan and (occasionally) a blender are all you need.

Are substitutions allowed if I don’t have all the spices?

Yes — each recipe suggests easy substitutions where possible, and you can still achieve great flavour with basic pantry spices.

Can I make these dishes ahead of time?

Yes. Curries, lentils and rice dishes often taste better the next day, making them ideal for meal prep. in facy many restaurants will make sauces ahead of time to let the flavours develop. If you have the patience (not including fish or seafood curries), let your curry sit for a day in the fridge and taste the difference!
